EHOA - Environmental Health Officers Association
Primary Food Hygiene course – 1 DAY
This course will provide a better understanding of the causes of food poisoning and how to prevent this from occurring. Course content is based on the skills required to meet FSAI level 2 Guide to Food Safety Training
Course Content:

- Food Delivery and Storage
- Food Preparation, Cooking and Service
- Personal Hygiene
- Design, Layout of premises and pest control
- Cleaning
- Introduction to HACCP
Exam: 45 minute exam
EHOA (Environmental Health Officers Association) course
Cost - €265 +
Exam fee €30 per person
Certificate: Certificate issued by EHOA
Introduction to HACCP – 1 DAY
Prerequisite: Participants should have completed the EHOA 1 Day Course prior to completing this course.
This course provides a mix between the theory of HACCP and its practical application. Candidates will understand the role of a HACCP based food safety system in meeting current legislative requirements.
Course Content:
- HACCP – What, Why, Benefits, Legal Issues
- Management responsibilities
- Food hygiene requirements (Pre-requisites)
- HACCP plan & CCP’s
- Records and filing
- Audit and review
- Recap
Exam: Assessment is through a 45 minute written exam
Cost - €265 +
Certificate: Successful candidates will receive a Castle Safety Certificate in Introduction to HACCP.
HACCP Implementation – 2 DAY’S
Prerequisite: Participants should have completed the 1 Day Introduction to HACCP Course prior to completing this course.
This course provides a mix between the theory of HACCP and its practical application. This allows participants to acquire the skills necessary to develop or review the HACCP system in their own company.

- Food safety management control

- Food safety legislation
- Pre-requisites – “The Back Bone of HACCP”
- Purchasing control
- HACCP background
- Hazard analysis
- HACCP plan application and development
- HACCP plan implementation
- HACCP verification
- Documentation and review
- HACCP case study
Exam: Assessment is by means of a 1 hour written exam
Cost - €475.00 Lunch / Tea & Coffee is provided over both days.
Certificate: Successful candidates will receive a Castle Safety Certificate in HACCP Implementation.
Food Safety for Management – 1 DAY
Course Content:
Food Safety System/Management Responsibilities.
- Food Hygiene and Labelling Legislation - overview
- Staff Training – Training plans/levels, Internal, External options. Competency assessment.
- Basic Bacteriology and High Risk Foods
- HACCP – Introduction, Risks, Background etc, Pre-Requisites
- HACCP – Plans/ Flow Chart and CCP’s
- Other records required inc. Product Recall and Traceability
- Collection, Review and Maintenance of Records
- HACCP verification - Internal and External Audits
- Complaint management
- HACCP review – how do you know your system is effective
Exam: Assessment is by means of a 1 hour written exam.
Certificate: Successful candidates will receive a Castle Safety Certificate in Introduction to Food Safety Management.
